cl’s living chocolate chip cookies
cl’s living chocolate chip cookies were inspired by a post i saw over at cucina libera, loosely translated, free cuisine. many times a recipe has promised their chocolate chip cookie will taste like the real thing and i am left not sold, until now. at cucina libera the cookies were already a great high-raw, vegan, nut free recipe, but because i cannot help myself, i played around with the recipe, dressed it up and made a completely raw/living chocolate chip cookie that i am excited to share.
cl’s living chocolate chip cookies
2 cups shredded coconut
1 cup medjool dates, about 9 dates
1/4 cup + 1 tablespoon artisana raw almond butter
1/4 cup banana, chopped
2 tablespoons raw cacao nibs
1/4 teaspoon sea salt
1. put shredded coconut into food processor and run 30-40 seconds.
2. add in sea salt and chopped dates, run for an additional 10-15 seconds.
3. add in almond butter and banana. run until the mixture becomes more dense and almost takes the form of a ball, about 1-1.5 minutes.
4.transfer to a bowl and stir in the cacao nibs. this is more of a use your hands and press them into the dough situation.
5. using a tablespoon, scoop mixture and press into the shape of a small cookie.
6. place on dehydrator @110 degrees for 30-32 hours. makes about 24 chocolate chip cookies.
These are fantastic! I ate a warm cookie this morning straight from the dehydrator. – yum!
thanks kerry-that’s just how i do it sometimes, who doesn’t like a warm cookie for breakfast…especially when filled with superfoods!
