pecan brownie bars are a raw, living, wheat and gluten free option geared to delight the senses. the pecan itself is an elegant, versatile and rich tasting nut that has been shown to improve the immune system when it is included in the diet day to day. containing more antioxidants than other nuts, studies have also shown that pecans are effective in the fight against heart disease, cancer, alzheimer’s and parkinson’s disease. pecan brownie bars are a quick, easy and drama free way to get a portion of the four to five servings of nuts and seeds that are suggested daily.

pecan brownie bars

2 1/2 cups soaked and dehydrated pecans

1/2 cup raw cacao nibs

1/3 cup black currants

1/4 cup dried shredded coconut

2 tablespoons artisana raw organic extra virgin coconut oil

2 tablespoons raw organic active manuka honey

1/8 teaspoon sea salt

1. put all ingredients in the food processor and run for up to 1 minute.

2. take the dough and place between two pieces of parchment paper. use a cutting board to flatten the dough to the desired thickness and use a wet knife to cut into the shape of brownies. place in the freezer for at least two hours. mine never last long but because they are in the freezer they should keep up to 2 months. makes 23-25.

    This is something I’ve never heard of – why would you soak them then dehydrate them?

      hi patti, it is an optional step. soaking and dehydrating essentially mimics nature to germinate nuts and seeds, making them more nutritionally available and more digestible for some. check out my post to soak or not to soak…for more information.
