have i mentioned my adoration of kale? it’s big, it’s consuming and a record was set following a long yoga class one afternoon. coming in hungry, it took little time to clear four dehydrator trays before even sitting down. one head of kale per tray and that’s a lot of green. excessive? yes, but really it’s none of your business and i do remember a company slogan convincing me ‘you can’t eat just one‘ somewhere in my past.

salt-n-peppa kale chips

2 heads of kale, any style works

1/4 cup hemp seeds

2 tablespoons cold pressed extra virgin olive oil

2 tablespoons lemon juice

1 teaspoon sea salt

1 teaspoon ground black pepper

1. tear both heads of kale into 2-3 inch squares and place in a bowl.

2. add olive oil, lemon juice, sea salt and black pepper. massage well.

3. stir in hemp seeds and place on teleflex-lined dehydrator sheets at 110 until crisp, about 2.5-3 hours.
