celeriac sushi rice

celeriac, declared the ugly ducking of the veggie world, easily becomes a beautiful wheat, gluten and grain free sticky sushi rice. found in the same family as the turnip and potato, celeriac is a low starch cousin of the starchy winter root vegetables. it is a great alternative to its more starchy family members. this ugly duckling is high in both potassium and soluble fiber,  which may help lower blood pressure while reducing the amount of cholesterol found in the blood respectively. pungent, crunchy and rumored to taste better the more beastly it looks, let celeriac be the way your nori rolls.

celeriac sushi rice

3 cups celeriac, peeled and chopped (typically, 1 large or 2 medium celeriac)

1 tablespoon apple cider vinegar

1 teaspoon sea salt

1 teaspoon active manuka honey (or sticky sweetener of  your choice)

1. place celeriac, apple cider vinegar and sea salt in food processor. run until rice-like mixture forms, 20-40 seconds.

2. place mixture in bowl and stir in sticky sweetener. reserve in a glass jar in the refrigerator for up to one week.
