healthy vegan pear crumble
try a healthy vegan pear crumble for your next holiday gathering and there’s a good chance nobody will even notice it’s vegan, wheat free, gluten free, nut free and all that jazz. i love making this and taking it with me to festivities and get togethers, as it makes me feel comfortable knowing there will be a healthy dessert there i can snack on. it is sweet but contains no refined sugars and will not yo-yo your blood sugar levels while you celebrate. share the gift of good healthy food with your friends and loved ones this season.
healthy vegan pear crumble
5 cups bosc pear, cored and chopped
2 cups pecans
2 cups medjool dates, pitted
1/2 cup shredded coconut
1/4 cup coconut crystals
3 tablespoon coconut butter
2 tablespoons lemon juice
2 tablespoons ground cinnamon
1/4 teaspoon ground cardamom
1/8 teaspoon sea salt
1. place 2 1/2 cups pear in a 64oz glass pan and set aside.
2. for the filling: in a food processor process 2 1/2 cups pear, 1 cup dates, 1 tablespoon cinnamon, lemon juice, cardamom and sea salt until well mixed. pour mixture over chopped pears and set aside.
3. for the crumble: in a food processor process pecans, 1 cup dates, shredded coconut, coconut crystals, coconut butter, 1 tablespoon cinnamon until well mixed.
4. mix some of the crumble into the filling and spread the rest on top. place in refrigerator 1-2 hours to firm up, cut and serve. cover tightly and store remaining in the refrigerator. keeps 5-7 days.
