plant based tacos

this rawcipe is a plant-based walnut taco building experience. it’s not quite chipotle but, in my opinion, it’s better because you can make it at home. it’s as simple as having seasoned walnut taco meat, great guacamole and a head of purple cabbage on hand.

in no way shape or form am i a chipotle hater. it’s a great, mostly healthy, fast food joint that seems to have food morals  i’m happy to support. when i’ve been in with friends i found there to be no shortage of fresh veggies making it easy to build a satisfying vegan meal.

by the way, one area i excel in while working with health clients is helping them navigate through social settings while making the healthiest choices available. i. e. chipotle, happy hours and holidays.

even if you hit up a truck stop in the middle of nowhere you’re bound to find dark chocolate, unsalted nuts and fresh water. healthy fats, a touch of protein and clean hydration is a trifecta of travel companions. it is possible to be social, have fun and be healthy.

i digress. back to the building of burritos or tacos if you will. the toppings can vary but my favorites are:

seasoned walnut taco meat

fresh greens

shredded purple cabbage

shredded carrots

shredded jicima

sliced radish

salsa

guacamole

plant based taco shells

for the shells:

purple cabbage: with a paring knife make a small cut at the bottom of an outside leaf and peel from the edges. it’s a rolling in from the edges and while being careful they will almost ‘pop’ off in one piece.

any large leafed greens will work as well such as: collards, chard, romaine

for the taco:

place a cabbage ‘shell‘ on a plate. fill with walnut taco meat, great guacamole, and other toppings of your choice. grab with confidence and saddle up for taco night!

  3. im absolutely loving the idea of walnut taco meat..i have tried making pesto sauce with it but faux-meat sounds fantastic!
