arugula salad with basil oil dressing
arugula salad with nuts, peaches and basil oil dressing is a satisfying, crisp and light salad. honestly, this time of year it works morning, noon and night for me! i have only love for anything that falls into the family of fresh green vegetables and even more so when dressed in a few of my favorite things. the sweetness of the peaches combined with the basil oil dressing rounds out the peppery bitterness that some people fear in arugula. personally, arugula’s bite is a sweet love song to my taste buds. for added texture and to complete the adventure, toss in the crunch of the walnuts or pecans. enjoy!
arugula salad with walnuts, peaches and basil oil dressing
4 cups organic baby arugula
1 cup peaches, chopped
1/4 cup basil oil dressing
1/4 cup soaked and dehydrated walnuts or pecans, chopped
1. place the arugula in a large bowl and dress with basil oil dressing.
2. add in nuts and peaches. makes two servings.
