creamy chocolate cashew soft serve ice cream
september’s push to preserve summer has been stirred and swirled to create a creamy chocolate cashew soft serve ice cream. it’s healthy enough to eat for breakfast, treat enough for an after dinner desert, and does NOT require an ice cream maker or special blender. what?!
and did i mention it only has five ingredients?
this dairy and soy free delight can be made vegan or not depending on your sweetener of choice. typically i prefer using dates, maple syrup or raw honey but most often reach for the honey when making soft serve ice creams. they seem to turn out creamier and less icicle-ish.
creamy chocolate cashew dairy-free cashew ice cream
1 cup water
1/2 cup cashew butter
1/4 cup coconut butter or coconut manna
1/4 cup cacao powder
3 tablespoons active manuka honey or sweetener of choice
1. place everything in your blender and blend well.
2. pour into a bowl and freeze around 2.5-3 hours.
3. take it out of the freezer 10-15 minutes before you plan to serve, scooping what you need.
This “Ice Cream” looks absolutely delicious! I’m trying to find alternative, healthier versions of my favorite foods, and since chocolate ice cream is high on that list, I am really looking forward to trying this very soon. Thanks for sharing!

ok – followed recipe as baseline – but used Hazlenut butter and Fryer’s Cocoa – it was amazing! tastes like a creamy Hazelnut gelato – This is a Keeper!
