zesty goji protein bars are a crunchy treat that are easy to prepare and even easier to eat. they have been tried and tested on local yogis and yoginis, cyclists, even hikers and have unanimously been a hit. goji berries are bright orange-red in color which is a significant marker they are high in antioxidants and have traditionally been regarded as a strength building liver protector. goji berries are a superfruit that will super charge you and your continued adventurous efforts.
zesty goji protein bars
1 cup buckwheat, soaked and dehydrated
1/2 unsweetened shredded coconut
1/3 cup goji berries
1/4 cup coconut oil, liquified
2 tablespoons coconut butter
2 tablespoons active manuka honey
1 teaspoon orange zest
1. mix buckwheat, shredded coconut, goji berries and orange zest in a bowl.
2. add in coconut butter, coconut oil and honey. stir well and place in the freezer for 10-15 minutes. this is optional but i find it helps to shape the mixture in the following step.
3. using two cutting boards or a rolling pin, press out the mixture between two pieces of unbleached parchment paper. use spatula or other flat edge to firm the edges. this will form a square that is roughly 6.5inches x 7.5inches.
4. freeze again until solid and cut pieces to desired size.
