fresh organic raw vegan arugula green saladfresh lemon arugula salad is a healthy, raw, vegan, wheat and gluten free k.i.s.s. (keep it simple salad) recipe that plays with the taste buds. often people are leery of the arugula and its bold flavor. it’s not called the salad rocket for nothing! i’m a huge fan of arugula and use it in many rawcipes.

my good friend kari, mythologydesigns.com, recently introduced me to joanna, joannapowellstudio.com, another talented local artist during a studio sale at the university. with so many beautiful pieces to choose from it was a difficult decision but i went with the bowl in the picture above and i love it! check out joanna’s work and pick up a great piece to hold your very own fresh arugula salad.

fresh arugula salad

2 cups tightly packed arugula

1-2 tablespoons lemon juice mixer (i prefer tangy and generally use 2TB)

1-2 tablespoons cold pressed olive oil (typically i go with less oil, it’s really about preference)

up to 1/8 teaspoons sea salt

mix everything in a bowl and serve. serves 1-2.

    Arugual salad is a favorite of mine and really not sure why other people aren’t jumping on board to make and eat this great salad.

      i agree, i LOVE arugula but i’ve heard a number of people say they don’t care for it…honestly, i’m sure they’ve tried it before or if it just hasn’t been prepped correctly. cheers!

    I love arugula and have it often. I once had some from a neighbors garden and it was too strong for me. It is interesting how store bought isn’t as spicy!

      i’ve noticed that when i find it at the farmers market and i believe it’s because the store bought is baby arugula and your neighbors was most likely a more mature plant. if you add a healthy fat based dressing, like a creamy avocado to your neighbors arugula, it might help the spice for you (:
