raw vegan pie crust recipeit is beginning to feel a bit like fall around here and fall makes me think of pie, more specifically the crust of pie. personally i have always been more interested in the pie crust than the actual filling and quite often that is the only part of the pie i’m interested in eating.  this is a healthy raw vegan pie crust recipe that consists of a walnut and pecan nut base and it is fruit sweetened with medjool dates, in my opinion not too much sweetener but enough to help the binding process. this pie crust recipe is a quick and easy wheat and gluten free foundation fit for any pie filling.

raw vegan pie crust

1 1/2 cups pecans

1 cup walnuts

1/2 cup medjool dates

2 tablespoon cold-pressed coconut oil

1 tablespoon ground cinnamon

1/4 teaspoon sea salt

place all ingredients in a food processor and combine until well mixed. press into a 9 inch pie plate. press and shape firmly to ensure crust remains in tact. chill 2-3 hours, fill, cut and serve.
