baby spinach with mango date dressing and sliced strawberries is my current go-to fresh summer salad recipe. recently i took a great road trip to santa fe, new mexico with my mother and aunt who were visiting from wisconsin. i was a santa fe first timer and it is an inspiring area to say the least. after a long morning of exploring the plaza we decided to walk back to our villa to fill up on a healthy lunch and catch a refreshing swim before walking back to the plaza for a rolling stones cover band that would be playing at a pub that evening. along the way i stumbled over the hearts pictured above etched in a curb and it was on that same walk, this simple salad was dreamed up.

chalk it up to the fact we had a limited number of ingredients to work with while we were very hungry, but baby spinach with mango date dressing and sliced strawberries was a home run salad for us and i’ve been excited to share it with you. much to our pleasure it wasn’t the only home run we saw during their visit as we hustled back to denver to watch our milwaukee brewers beat up on the colorado rockies for three games straight. enjoy the salad!
