raw vegan mango date dressing
3 ripe ataulfo mangos, cored and chopped
3 medjool dates*, pitted
place mango and dates in a high-speed blender** and blend well. use as needed and reserve the remaining dressing in a glass jar. it is my preference to make small batches more often but you could also use extra mangos or dates to make a larger batch.
*if your dates are not juicy soak in water 15-20 minutes prior to making dressing
**if not using a high-speed blender, listen closely to how the motor is running and don’t be afraid to add additional mango or water (or the water you soaked your dates in)
