dairy-free coconut yogurt parfaitsuperfood filled dairy-free coconut yogurt parfaits have rapidly become a daily event in my world. they are a cinch to throw together, loaded with nutrition and have upwards of four gazillion different variations. maybe not that many but you get the picture. quite often i hear people say they don’t have time to put together healthy meals because of hectic schedules whether it is raising children or keeping up with careers and school studies–or all of the above. ultimately planning ahead and having prepped before the craziness of the week takes off is a big help. food choice, meal preparation and weekly planning are some skills i’ve focused on with clients while we design their healthy lifestyle.

for this particular recipe it is helpful to make a batch of either sweetened or unsweetened coconut yogurt to have on stand-by in the refrigerator. the fresh ripe fruits found in my kitchen rotate often and vary from season to season. i love rotating various in season fruits and vegetables through my meals because a) they taste insanely better and b) they tend to be abundantly available. because of their availability you can typically find killer deals to stock your shelves and fill many superfood parfaits with. currently the stone fruits and berries are bursting and are my toppings of choice as seen below with fresh apricots and blueberries.

fun fact: guests consume more than 61,000 pounds of berries during the two-week wimbledon tennis tournament which takes place annually during late june and early july. berries are delivered by 5:30am daily to the all england club in london and are drowned with 1,900 gallons of cream throughout the course of the tournament. yes, 1,900 gallons of cream. i’m assuming it’s not a coconut cream so i’m not interested, but sign me up for a piece of the berry action and seat near the court!

 

what you will need to build your own drool worthy superfood parfaits:

sweetened or unsweetened coconut yogurt

fresh or frozen fruits-chopped, sliced, peeled, etc.

topping suggestions: grain-free cranberry pear granola, one mixture-two moves, nuts and seeds, shredded coconut, coconut flakes, cacao nibs, bee pollen, honey, maple syrup, goji berries, etc.

 

how to:

grab a bowl, goblet or glass. layer your ingredients in the desired order. then, dig in and repeat as necessary.
