let’s get this out of the way, i’m really into the coconut. i’m into the coconut itself, as well as, the coconut waters, the coconut meat, the shredded coconut, the coconut oil, the coconut butter and the funny thing is that the coconut is not even a true nut but a drupe. that places it into the same family as the peach, the plum, the nectarine, the mango and even the almond.

this RAWcipe calls for the coconut’s water which is also commonly referred to as living water. fyi, if you were ever stranded on a deserted island and the only resource that was available were palm trees that were producing coconuts, equipped with knowledge of how to use them, you would be able to survive-ever seen cast away with tom hanks? i digress, coconut water is actually the living tissue of the palm. it is a superfood filled with minerals, vitamins, essential amino acids, sugars, as well as, growth hormones which makes it as incredibly resourceful as it is healing. it is also hypo allergenic so for those with food allergies, it is usually safe to consume without a fear.

like i said, you will laugh at just how easy some of these RAWcipes can be and yet there is no shortage of flavor or excitement. spinach is one of the richest known sources of protein amongst all plant sources with around 49% of its caloric value coming from the proteins. so if you take the green popeye-like muscle building properties of the protein packed spinach and combine them with the gold-like qualities of the electrolyte filled living coconut water , you have a boom-boom-pow-erful elixir that is just about laughable!

2.5 cups coconut water*

2 cups spinach

1/4 banana up to 1 banana**

1 cup pineapple***

1. place everything in the blender and blend. makes about 1 quart.

*although fresh coconut water is preferred it is not always an option. zinco has 1 liter carton which i always have on hand as i feel it tastes closest to having just come out of the coconut itself. no coconut water in the house, just use water.

**i tend to always go light on the banana just because of personal preference so see what works for you. let it be noted, i’ve also made this without any banana at all and that will not happen again if i can help it.

***mango is another fantastic option for this smoothie.

    I just made this smoothie and it’s amazing! I didn’t have coconut water in the house, so I soaked 2 tablespoons of Chia Seeds in 2 cups of water and used that instead. I had a tropical frozen blend of fruit so I ended up using bananas, pineapple AND mango. Green and Gold IS magnificent! Thanks for the great recipe!

    Just made this with a local melon rather than tropical fruit. Curious taste. I think that something in the melon induced foaming, though, as the result was a carafe of foam.. Next time I think I’ll try some pineapple 😉
