great guacamole
what would a great guacamole recipe be without a ripe raw food like the avocado? somewhere along the way i’ve read that on super bowl sunday nearly 8 million pounds of guacamole is eaten and for cinco de mayo it’s more like 14 million pounds! i’m not sure what the tally during world cup fever is but if you’ve been following the action you’re better off keeping track of how many times you hear the famous riff of this song. whether you’re headed to watch the next world cup game or to catch a fourth of july party, this is a simple and nutritious healthy guacamole recipe for you to share. unless you’re sitting court side at wimbledon, there is also a high likelihood that music will make an appearance in some form, so cheers to the coming holiday weekend!
great guacamole is also a welcome addition to the veggie sub sandwich, turmeric pepper flax crackers, leafy green lunch wraps or the raw vegan pizza crust recipe to name a few of the most recent posts. try it out and comment below letting us know how it goes!
great guacamole
3 avocados, pitted
1 cup jicama, grated
2 tablespoons lime juice
1 teaspoon sea salt
1 teaspoon ground cumin
1/8 teaspoon ground chipotle
place all ingredients in a food processor and run until well mixed but not juicy, around 20 seconds. if you have any left, store in a glass jar and consume in the next few days.
