wheat and gluten free veggie sub sandwich
wheat and gluten free veggie sub sandwiches are a quick and easy raw vegan meal that prove tough to resist. they’ve been a hit at bbq’s, baseball games and even following long mountain bike rides. it’s a refreshing sub sandwich that is full of fiber and loaded with an unlimited number of healthy carbohydrates. romaine lettuce is a favorite sandwich bun alternative of mine and proves firm enough to support all the fillings of my favorite veggie subs. although i used my homemade raw vegan ranch dressing in the recipe below, others such as, hurts like heaven cashew cheese spread, creamy cashew ‘alfredo’ sauce and savory seed cheese have worked very well also.

romaine lettuce
various chopped, sliced, julienned or shredded veggies such as: mini pepper, radish, carrot, beet, cabbage etc.
homemade raw vegan ranch dressing
other great add-ins: sliced avocado, fresh spouts, baby greens, micro greens, etc.
1. pick two pieces of romaine lettuce, one larger leaf from the outside and a smaller leaf from closer to the center of the bunch. place the larger leaf on a plate.
2. add on baby greens, sprouts, avocado and various chopped, sliced, julienned or shredded veggies and drizzle with ranch dressing.
3. top with the smaller romaine leaf and serve with a side of kale chips. mix it up with salt-n-peppa, cool ranch, kettled kale, touch of lime, a ‘cheesy’ twist of chard or any of these other kale chip recipes.
