cashew nuts are kidney shaped seeds found at the bottom of the cashew apple. the nuts are the produced fruit of the cashew tree and a native to northern brazil. with a mild sweetness and smooth texture the cashew not only adds flavor and body to many raw/living food recipes, they also boost your mood and stabilize your thoughts to help fight depression. they contain oleic acid, the same heart-healthy fat that is found in olive oil, making them a key factor in maintaining proper cardiovascular health. this cashew spread is a cheese alternative that is high-raw, vegan, non-dairy, wheat and gluten free, requires little time to prepare and tastes great with practically everything.

hurts like heaven cashew cheese spread

1 cup raw cashews (soaked 4-6 hours and rinsed well)

1/4 cup chopped italian parsley

1/3 cup water

3 tablespoons nutritional yeast (optional, not raw)

1 teaspoon sea salt

place ingredients into the blender and blend until smooth. put spread into a glass jar and store in the refrigerator for up to one week. makes about 8 ounces.

*listen to the running of your blender and be willing to add up to 2 tablespoons additional water for the optimal consistency of your cheese.
